mini pumpkin cheesecakes.

Every Sunday, my roommates and I invite our friends to join us for supper. Everyone contributes to the meal, taking turns preparing the main dish, sides, and desserts. There's always a lot of food and a lot of laughter. I'm loving this new tradition we call "Sunday Supper."

Justin was in charge of dessert this week. I was pretty excited when he told me he'd be making mini pumpkin cheesecakes because I've recently discovered that I'm a fan of pumpkin and real whipped cream. (I've always been a fan of cheesecake!)

The mini cheesecakes were delightful! They were the perfect size, easy to eat (no plate or fork necessary!), and mouthwateringly delicious! I knew I wanted to share the recipe with all of you because YOU NEED TO TRY THESE!


mini pumpkin cheesecakes

1 1/2 cups white sugar
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/8 tsp. ground cloves
1/8 tsp. pumpkin pie spice
2 T. all-purpose flour
3 (8 oz.) packages of cream cheese, softened
4 eggs
1 (15 oz.) can pumpkin puree 
1/4 cup sour cream
1 tsp. vanilla extract
1/4 tsp. almond extract
24 mini graham cracker pie crusts (Justin used Tenderflake Tart Shells)
1 1/2 cups whipped cream
1 pinch ground cinnamon, or more to taste

1. Preheat oven to 350°F. 
2. Mix sugar, cinnamon, nutmeg, cloves, pumpkin pie spice, and flour in a small bowl. 
3. Beat cream cheese in a large bowl until fluffy. Beat in eggs, pumpkin puree, sour cream, vanilla, almond, and sugar and spice mixture. 
4. Spoon mix evenly into pie crusts. Bake in preheated oven until cheesecakes are set (approx. 30 mins). Let cool on wire racks for 10 minutes. Refrigerate for 90 minutes. 
5. Top with whipped cream and a pinch of cinnamon right before serving. 
6. Enjoy! 

Note: Website says recipe makes 24; Justin's mix made 24 and he had enough left to make about 12 more.

    OH we didn't get a chance to go to Relish but I have a recommendation for you... if (when!) you go to Charlottetown PEI you need to go to BOOMburger, so delish!
